Does your vacation rhyme with flavors and authenticity? Take a gourmet tour of the markets in Millau, the Gorges and the Grands Causses!

Gastronomy and authenticity, that's vacation!

For me, vacations are all about gastronomy and authenticity! My plan for the week? Tour the markets and sample all the wonders Aveyron has to offer. Luckily, the Millau Grands Causses Tourist Office has put together a list of summer markets for me… All you have to do is follow the guide! 😍

Millau, night market Monday 🌙🎶

What better way to start the week than with a market under the stars! As soon as I arrived, the atmosphere was palpable: live music, illuminated stalls, tempting smells… A real festival for the taste buds and the ears.

My first stop? A steamingaligot stand, accompanied by a good piece of sausage. A little further on, I let myself be tempted by a flaune, a sweet local ricotta tart, and a few farçous, crispy little Swiss chard patties.

I wander between the stalls, glass of wine in hand, enjoying the friendly, festive atmosphere. There’s chatter, toasts and laughter… and I’m already won over!

Good to know!

Millau’s night market takes place in 3 different locations:

  • Place du Mandarous with its large fountain
  • Place Emma Calvé
  • On the Quais Sully-Chaliès opposite the Maladrerie

Liaucous, market of light Tuesday

We headed for Liaucous, a small village perched at the entrance to the Gorges du Tarn, for a charming evening market. As soon as I arrive at 6pm, the magic happens: the golden light of sunset turns the rocks red, and the atmosphere is one of relaxation.

Here, we stroll to the sound of an acoustic guitar, a glass of artisanal apple juice in hand. The products are varied: farmhouse cheeses, charcuterie, fragrant honeys, sourdough breads… I take the time to chat with the producers, who are passionate about their work and delighted to share their know-how.

Feeling peckish? I go for a gourmet plate of local produce, which I enjoy against a breathtaking backdrop. Simple and perfect.

Montredon, in the heart of Larzac Wednesday

Today, I could have gone to the Le Rozier market, renowned for its small artisan souvenirs… but I preferred to try Montredon, a militant and committed market in the heart of the emblematic Causse du Larzac.

Here, you don’t just shop, you meet committed producers who are fighting for local, responsible food. The principle is brilliant: everyone brings their own cutlery, and the producers take care of the feast! 🥗🍲

What’s on the menu? Farmhouse cheeses, organic bread, local vegetables, artisanal charcuterie… and even a glass of natural wine to accompany it all. The atmosphere is warm and inviting, with debates taking place around large wooden tables, and I leave feeling full and inspired.

Millau, the grand finale 🎉 Friday

Last stop on our week of markets, the big one in Millau! The only exception on our trip, this market is held in the morning, but it occupies a large space right in the heart of the town… It’s a veritable explosion of colors, smells and flavors. As soon as I arrive, I’m caught up in the cheerful hubbub of the stalls: there’s chatter, bargaining, joking… and it smells delicious.

I take my time to sample the local specialities in the covered market: a glass of Côte de Millau, a few slices of Roquefort, a crusty piece of bread… and why not a handful of local walnuts to nibble on as you stroll along?

I leave with a full basket, a feast for my taste buds and the desire to return next year to try out the markets I haven’t yet discovered.
